Our ORGANIC SAALGA Extra Virgin Olive Oil comes from a careful selection of olives all coming exclusively from the Sicilian territory and precisely from the provinces of Trapani and Palermo, the olives selected for this type of oil are exclusively Nocellara del Belice, Cerasuola and Biancolilla from oil to the world. To obtain the organic SAALGA oil, the olives are harvested in the period between 10 October and 20 November in order to obtain an oil with exceptional organoleptic characteristics and very low acidity. Manual harvesting methods are also used and the oil is obtained no later than eight hours from the olive harvest and is stored inside a stainless steel tank placed under nitrogen saturation and inside rooms at a controlled temperature in order to preserve the qualities over time.
