Olive groves

 

Our company pays much attention to the management of its olive groves, monitoring the entire production chain thanks to the help of Agronomists who take care of production according to a very strict internal disciplinary

 

All stages of cultivation are constantly monitored by the company: the olives are hand-picked in a light premature state , then put in crates and transferred every day to the mills.

The first step in the oil production process is cleaning: the olives pass through the defoliator, which removes the leaves, then pass through a grid and are freed from any small pebbles and then washed in fresh water; then following is the pressing, from which the olive paste is obtained, which is the third phase, it is called " gramulation ",it is continuously mixed: so that the vacuoles which are the cells that make up the olive, break and release the oil; in the fourth phase, the extraction, which consists the separation of water, oil and pomace takes place, giving life to extra virgin olive oil. The oil thus selected decant in steel tanks for a period ranging between two and ten weeks, after which it is packaged.

 

The extra virgin olive oil produced in our factory, is a product of exceptional quality, obtained with the " two-phase " continuous-cycle extraction method that allows us to obtain a product with a superior organoleptic level, with a quantity of antioxidants significantly higher than any extra virgin produced with the traditional method.

 

We manage an area of about 200 hectares, all strictly from organic farming and registered to the I.G.P. Sicilia.

 

Our cultivars are the following:

  • Nocellara del Belice;
  • Cerasuola;
  • Biancolilla
